A fresh and vibrant salad featuring juicy grilled nectarines, creamy burrata, and savory prosciutto, perfect for summer gatherings.


Ingredients

  • 4 ripe nectarines, halved and pitted
  • 8 ounces fresh burrata cheese
  • 4 ounces thinly sliced prosciutto
  • 4 cups arugula or mixed greens
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • A handful of fresh basil leaves for garnish

Instructions

  1. Prep the nectarines: Start by halving and pitting your nectarines. Slice each half to create pretty wedges.
  2. Grill the nectarines: Preheat your grill (or a grill pan) over medium heat. Lightly brush the cut side of the nectarines with olive oil. Place them cut-side down on the grill, cooking for about 2–3 minutes until they have beautiful grill marks and are tender.
  3. Prepare the greens: While the nectarines are grilling, in a large bowl, toss arugula (or your choice of greens) with a drizzle of olive oil and balsamic vinegar. Season with salt and pepper.
  4. Assemble the salad: On a large serving platter or in individual bowls, spread out the dressed greens. Layer the grilled nectarines on top, followed by generous dollops of burrata.
  5. Add prosciutto: Arrange the prosciutto slices around the salad, letting them drape artfully over the burrata and nectarines.
  6. Garnish and serve: Finish with fresh basil leaves for an aromatic touch. Serve immediately for the best flavor and texture!
