- 4 ripe nectarines, halved and pitted
- 8 ounces fresh burrata cheese
- 4 ounces thinly sliced prosciutto
- 4 cups arugula or mixed greens
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- A handful of fresh basil leaves for garnish
Instructions
- Prep the nectarines: Start by halving and pitting your nectarines. Slice each half to create pretty wedges.
- Grill the nectarines: Preheat your grill (or a grill pan) over medium heat. Lightly brush the cut side of the nectarines with olive oil. Place them cut-side down on the grill, cooking for about 2–3 minutes until they have beautiful grill marks and are tender.
- Prepare the greens: While the nectarines are grilling, in a large bowl, toss arugula (or your choice of greens) with a drizzle of olive oil and balsamic vinegar. Season with salt and pepper.
- Assemble the salad: On a large serving platter or in individual bowls, spread out the dressed greens. Layer the grilled nectarines on top, followed by generous dollops of burrata.
- Add prosciutto: Arrange the prosciutto slices around the salad, letting them drape artfully over the burrata and nectarines.
- Garnish and serve: Finish with fresh basil leaves for an aromatic touch. Serve immediately for the best flavor and texture!
