- 2 cups cooked chicken, shredded
- 2 cups shredded cheese (cheddar or Monterey Jack)
- ¼ cup butter
- ¼ cup flour
- 2 cups chicken broth
- 1 cup sour cream
- 1 can (4 oz) diced green chiles
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter in a saucepan over medium heat.
- Stir in the flour to create a roux, whisking until smooth.
- Whisk in the chicken broth until it thickens, then stir in sour cream and green chiles.
- Fill each tortilla with shredded chicken and cheese, then fold and place seam-side down in a baking dish.
- Pour the white sauce over the enchiladas.
- Bake for 20-25 minutes until bubbly and golden.
