Description

Refreshingly sweet popsicles made from ripe watermelon and zesty kiwi, perfect for summertime enjoyment.


Ingredients

Scale
  • 2 cups watermelon, cubed
  • 2 cups kiwi, peeled and sliced
  • 1 tablespoon honey or agave syrup (optional)
  • 1 tablespoon lime juice (optional)

Instructions

  1. Puree the watermelon: Place the cubed watermelon into a blender and puree until smooth.
  2. Fill the molds: Pour the watermelon puree into popsicle molds, filling them halfway.
  3. Layer on the kiwi: Take your freshly sliced kiwi and layer it on top of the watermelon puree.
  4. Add sweetness and zing (if desired): Mix honey or agave syrup with the remaining watermelon puree and a splash of lime juice, then pour over the kiwi layers.
  5. Insert sticks and freeze: Carefully insert popsicle sticks into the molds and freeze for several hours until solid.
  6. Release the popsicles: Run warm water over the outside of the molds to release the popsicles.

Notes

These popsicles can be made a week in advance and stored in an airtight container in the freezer. Try various fruits for customization.
