Instructions
- Heat the oil: In a large skillet over medium heat, add the olive oil. Once shimmering, add the chopped onions and sauté until golden and fragrant, about 3-4 minutes.
- Cook the chicken: Season the chicken thighs with salt and pepper. Add them to the skillet and sear for about 5 minutes on each side, until they are golden brown and cooked through. Remove and set aside.
- Sauté garlic: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.
- Create the sauce: Pour in the chicken broth and bring to a gentle simmer. Add the heavy cream and stir until well combined. Let it simmer for about 3 minutes, allowing the flavors to meld beautifully.
- Add peas and chicken: Stir in the frozen peas and return the chicken to the skillet. Sprinkle with Italian seasoning and cook for another 5 minutes until everything is heated through and the sauce is creamy and luscious.
- Garnish and serve: Sprinkle fresh parsley over the top for a touch of color and serve immediately over rice, pasta, or with crusty bread to soak up every bit of that creamy goodness.
