Instructions
- Preheat your smoker to 225°F, allowing it to reach the perfect temperature for slow cooking.
- Trim any excess fat from the brisket, leaving about a 1/4 inch fat cap.
- Generously season the brisket on all sides with salt, black pepper, garlic powder, and onion powder.
- Place the brisket in the smoker, fat side up.
- Add soaked wood chips to the smoker box or directly on the coals.
- Smoke for 720-960 minutes, or until the internal temperature reaches between 195-205°F.
- Wrap the brisket in butcher paper or foil and let it rest for at least an hour before slicing.
