Description

Juicy Teriyaki Chicken Skewers marinated in a sweet and savory sauce, perfect for grilling and summer gatherings.


Ingredients

  • 2 lbs. chicken thighs (or breasts), cut into 1″ cubes
  • 2 tbsp cornstarch
  • 1 cup water
  • 1/3 cup brown sugar
  • 1/3 cup soy sauce (low sodium recommended)
  • 2 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1/2 tbsp fresh ginger, minced
  • 1 tbsp honey
  • 1/2 tsp sesame oil
  • 8 skewers
  • Sesame seeds (for garnish)
  • Chopped green onion (for garnish)

Instructions

  1. Make the sauce: In a small bowl, combine the cornstarch and water. In a medium saucepan, whisk together the remaining ingredients along with the cornstarch/water mixture. Stirring frequently, bring the sauce to a simmer. Cook until it lightly thickens and transforms into a beautiful dark brown hue. Once thickened, remove from heat and let cool completely.
  2. Marinate the chicken: Once the sauce is fully cooled, place the cubed chicken in a large ziplock bag. Pour half of the cooled teriyaki sauce over the chicken and gently shake to coat. Allow the chicken to marinate in the fridge for at least 30 minutes.
  3. Prepare the grill: When the chicken has finished marinating, grab your skewers! Thread the chicken onto the skewers, being careful not to overcrowd them. Preheat your grill to medium heat.
  4. Grill the skewers: Once the grill is hot, place the skewers on the lightly oiled grill. Rotate the skewers every 3-4 minutes until the chicken is cooked through (internal temp should reach 165 degrees F), roughly about 20-30 minutes. During the last few turns, baste the skewers with the remaining teriyaki sauce.
  5. Serve and enjoy: Remove the skewers from the grill and serve with a sprinkle of sesame seeds and chopped green onion.

Make ahead by marinating the chicken overnight for deeper flavor.
