- 4 medium zucchinis
- 1 pound ground turkey
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- Salt and pepper to taste
- Cooking oil
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the centers to create boats.
- In a skillet, heat a little oil over medium heat and cook the ground turkey until browned.
- Stir in black beans, corn, taco seasoning, salt, and pepper. Cook for an additional 5 minutes until everything is well mixed.
- Fill the zucchini boats with the turkey mixture, pressing down gently to pack them in.
- Place the filled boats in a baking dish and top generously with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is bubbly and golden.
- Serve hot, and enjoy the comforting flavors!
