- 1 pound ground beef
- 1 cup uncooked rice
- 2 cups bell peppers, diced
- 1 can diced tomatoes (14.5 oz)
- 1 cup shredded cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups beef broth
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a large skillet over medium heat with the chopped onion and minced garlic until fully cooked, draining any excess fat.
- Stir in the uncooked rice, diced tomatoes (with their juices), beef broth, Italian seasoning, diced bell peppers, and salt and pepper. Bring to a boil.
- Reduce the heat and let it simmer for about 10 minutes, or until the rice is tender and fully cooked.
- Transfer the mixture into a greased baking dish, spreading it out evenly. Top with shredded cheese.
- Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
You can prepare the casserole a day in advance. Simply assemble, cover, and refrigerate until ready to bake.
