Ingredients

  • 1 cup butter, softened
  • 1 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tsp strawberry extract
  • 2 tsp pink food coloring
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 block cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 tsp strawberry extract
  • 1/2 cup granulated sugar

Instructions

  1. Prep the filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, 1/2 teaspoon vanilla extract, and 1 teaspoon strawberry extract. Beat until creamy and well blended. Set aside.
  2. Cream butter and sugar: In a large mixing bowl, using an electric mixer, cream together the softened butter and 1 1/2 cups granulated sugar until light and fluffy.
  3. Add dry ingredients: Mix in the egg, vanilla extract, and strawberry extract. Add the pink food coloring until you achieve your desired shade. Gradually mix in the flour, baking soda, and baking powder until well combined.
  4. Assemble the bars: Divide the dough in half. Press half of the dough into the bottom of a greased baking pan, creating an even layer. Spread the creamy filling over the top, and then crumble the remaining cookie dough over it.
  5. Bake: Preheat your oven to 350°F (175°C). Bake for 30-35 minutes until the edges are golden and the center is set.
  6. Chill & cut: Allow the bars to cool at room temperature, then chill in the refrigerator for at least an hour before slicing them into squares.
  7. Serve & store: Serve these bars chilled or at room temperature. Store any leftovers in an airtight container in the refrigerator for up to 4 days.

These bars can be made a day in advance. They also freeze well if you want to save some for later.
