Instructions
- In a slow cooker, add the Italian sausage, onion, and garlic. Cook on high for about 120 minutes, letting the flavors meld and the sausage brown.
- Once the sausage is cooked through, add in the chicken broth, diced tomatoes, and frozen tortellini. Stir it all together gently.
- Cover and continue cooking on high for another 30 minutes while the tortellini becomes perfectly tender.
- Stir in the heavy cream and fresh spinach, seasoning with salt and pepper to enhance the flavors.
- Cook for an additional 15 minutes, allowing the spinach to wilt and the soup to reach its creamy perfection.
