Ingredients

  • 1 pound Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 bag (9 oz) frozen tortellini
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. In a slow cooker, add the Italian sausage, onion, and garlic. Cook on high for about 120 minutes, letting the flavors meld and the sausage brown.
  2. Once the sausage is cooked through, add in the chicken broth, diced tomatoes, and frozen tortellini. Stir it all together gently.
  3. Cover and continue cooking on high for another 30 minutes while the tortellini becomes perfectly tender.
  4. Stir in the heavy cream and fresh spinach, seasoning with salt and pepper to enhance the flavors.
  5. Cook for an additional 15 minutes, allowing the spinach to wilt and the soup to reach its creamy perfection.
  6. Serve hot, topped generously with Parmesan cheese.
