- 4 medium zucchinis
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
- In a skillet over medium heat, cook the ground beef with the diced onion and minced garlic until browned.
- Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Simmer for about 5 minutes.
- Fill each zucchini boat generously with the savory beef mixture and place in a baking dish.
- Top each stuffed boat with shredded cheddar cheese.
- Bake for 25-30 minutes, or until the zucchinis are tender and the cheese is bubbly.
