- 2 medium sweet potatoes, peeled and diced
- 4 cups kale, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and garlic, cooking until the onion is translucent — about 3-4 minutes.
- Add the sausage to the pot and cook until browned, breaking it into smaller pieces as it cooks — about 5-7 minutes.
- Stir in sweet potatoes, broth, smoked paprika, salt, and pepper. Bring to a rapid boil, then reduce heat to a simmer. Cover the pot and let simmer for about 15 minutes or until sweet potatoes are tender.
- Add chopped kale and cook for an additional 5 minutes until wilted.
- Taste and adjust seasoning if necessary, then serve hot, garnished with fresh herbs if desired.
Notes
This soup can be made ahead and stored in the refrigerator for up to 3 days. It freezes well for up to three months.
