Description
A comforting weeknight dinner featuring tender salmon paired with zesty lemon orzo and fresh spinach.
Ingredients
Scale
- 4 salmon fillets
- 1 cup orzo pasta
- 2 cups vegetable or chicken broth
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 cup spinach (fresh)
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Heat olive oil over medium heat in a large skillet. Season the salmon fillets with salt and pepper and add them to the skillet, cooking for 4-5 minutes on each side until cooked through. Remove the salmon from the skillet and set aside.
- Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant. Stir in the orzo and cook for 1-2 minutes.
- Pour in the vegetable or chicken broth, lemon zest, and lemon juice. Bring the mixture to a boil, then reduce the heat and simmer until the orzo is tender, about 8-10 minutes.
- Stir in the fresh spinach until it wilts beautifully. Return the salmon to the skillet and warm it through for an additional minute.
- Garnish with chopped parsley and serve hot. Enjoy this comforting dish with your loved ones!
Notes
For added variations, try a crispy lemon herb coating or substitute orzo with zucchini noodles.
