- 8 oz pasta (your choice)
- 2 cups cherry tomatoes
- 4 cloves garlic, minced
- 1 cup ricotta cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese for serving (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cherry tomatoes and minced garlic with olive oil, salt, and pepper on a baking sheet. Roast in the oven for about 20-25 minutes until the tomatoes are caramelized.
- Cook the pasta according to package instructions until al dente.
- Drain the pasta and return it to the pot to keep warm.
- Add the roasted tomatoes and garlic mixture with the ricotta to the pasta and mix until combined.
- Serve hot, garnished with fresh basil and grated Parmesan cheese if desired. Enjoy!
