- 1 garlic bulb
- 1 teaspoon olive oil
- 1 cup unsalted butter (2 sticks), room temperature
- 3 tablespoons parsley, finely chopped
- 1 tablespoon rosemary, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon lemon juice
- 3 garlic cloves, roasted
Instructions
- Roast the garlic: Preheat your oven to 400°F. Remove excess papery layers from the garlic bulb, cut off the top, drizzle with olive oil, wrap in foil, and bake for 40 minutes until golden.
- Cool & prepare: Allow the roasted garlic to cool, then squeeze the cloves into a bowl.
- Combine ingredients: Add butter, parsley, rosemary, salt, pepper, and lemon juice to the same bowl and smash together.
- Shape the butter: Place the mixture on parchment paper and form into a tube or rectangle.
- Chill: Refrigerate the butter wrapped in parchment for about 60 minutes.
- Serve & enjoy: Once firm, slice and spread on bread, use on meats, or toss with pasta.
