- 1 can black beans, drained and rinsed
- 1 lb kielbasa, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 bell pepper, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat a drizzle of olive oil in a large skillet over medium heat.
- Add chopped onion and bell pepper, sautéing until soft, about 5 minutes.
- Stir in minced garlic and sliced kielbasa, cooking for another 2-3 minutes until fragrant.
- Add the rice, black beans, chicken broth, cumin, paprika, salt, and pepper.
- Bring to a gentle boil, then reduce heat to low. Cover and let simmer for 20-25 minutes, until the rice is tender.
- Fluff the rice with a fork and serve hot.
Notes
This dish reheats wonderfully and can be made ahead of time. Feel free to substitute different types of kielbasa or beans.
