Ingredients

- 2 cups cooked chicken, shredded
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 8 small tortillas
- Salt and pepper, to taste
Instructions
- Combine the shredded chicken, cherry tomatoes, cucumber, red onion, feta cheese, olive oil, red wine vinegar, oregano, salt, and pepper in a large mixing bowl.
- Gently mix the ingredients together until well combined.
- Warm the tortillas in a skillet over medium heat or microwave for about 20 seconds.
- Fill each tortilla with a generous serving of the Mediterranean chicken mixture.
- Serve immediately and enjoy!
Notes
For a quicker meal, use rotisserie chicken. Leftovers can be turned into a flavorful salad.
