Description

Light and fresh tacos filled with tender shredded chicken and vibrant Mediterranean flavors.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 8 small tortillas
  • Salt and pepper, to taste

Instructions

  1. Combine the shredded chicken, cherry tomatoes, cucumber, red onion, feta cheese, olive oil, red wine vinegar, oregano, salt, and pepper in a large mixing bowl.
  2. Gently mix the ingredients together until well combined.
  3. Warm the tortillas in a skillet over medium heat or microwave for about 20 seconds.
  4. Fill each tortilla with a generous serving of the Mediterranean chicken mixture.
  5. Serve immediately and enjoy!

Notes

For a quicker meal, use rotisserie chicken. Leftovers can be turned into a flavorful salad.
