Description

A refreshing cucumber salad that’s quick to make and perfect for summer, combining vibrant flavors with minimal fuss.

Ingredients

Scale
  • 2 large cucumbers, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup apple cider vinegar
  • 3 tablespoons sugar (or honey)
  • 1/4 cup water
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh dill or parsley for garnish (optional)

Instructions

  1. Wash the cucumbers thoroughly and slice them thinly, about 1/8-inch thick.
  2. In a bowl, combine the sliced cucumbers and red onion, tossing gently to mix.
  3. In a separate bowl, whisk together the apple cider vinegar, sugar, water, and olive oil until well combined.
  4. Pour the dressing over the cucumber and onion mixture, tossing gently to coat everything evenly.
  5. Season with salt and pepper to taste, letting your personal preference shine through!
  6. Garnish with fresh dill or parsley if desired for that added touch of freshness.
  7. Let it sit for about 10 minutes to allow the flavors to meld together, or refrigerate for a chilled experience.

Notes

This salad tastes even better after it has marinated for a few hours, so feel free to prepare it in advance!
