- 1 lb chicken breast, diced
- 2 cups chicken broth
- 1 cup asparagus, chopped
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced chicken and season with salt and pepper. Cook until browned, about 5-6 minutes.
- Stir in the orzo and chicken broth; bring to a gentle boil.
- Reduce the heat to a simmer and add the chopped asparagus; cook until orzo is tender, about 10-12 minutes.
- Stir in lemon zest and juice before serving.
- Serve hot, topped with Parmesan cheese.
Notes
Prep chicken and chop veggies the night before for easier cooking. This dish also freezes well—omit the cheese before freezing.
