Description

A cozy and comforting dish combining tender chicken, zesty lemon, and creamy orzo, perfect for family dinners.


Ingredients

  • 2 cups orzo pasta
  • 1 lb chicken breast, diced
  • 2 cups chicken broth
  • 1 cup asparagus, chopped
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced chicken and season with salt and pepper. Cook until browned, about 5-6 minutes.
  3. Stir in the orzo and chicken broth; bring to a gentle boil.
  4. Reduce the heat to a simmer and add the chopped asparagus; cook until orzo is tender, about 10-12 minutes.
  5. Stir in lemon zest and juice before serving.
  6. Serve hot, topped with Parmesan cheese.

Notes

Prep chicken and chop veggies the night before for easier cooking. This dish also freezes well—omit the cheese before freezing.
