Description

A warm and comforting one-pot meal that brings the flavors of Greece to your dinner table with chicken, rice, and zesty lemon.


Ingredients

  • 2 tablespoons olive oil
  • 4 chicken thighs (boneless, skinless)
  • 1 onion (diced)
  • 4 cloves garlic (minced)
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon (juiced and zested)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup frozen peas
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken thighs with salt and pepper, then add to the pot. Cook until browned on both sides, about 5-7 minutes. Remove chicken and set aside.
  3. Add diced onion and minced garlic to the same pot; sauté until softened and aromatic.
  4. Stir in rice, chicken broth, lemon juice, lemon zest, oregano, and thyme, allowing flavors to mingle.
  5. Return the chicken to the pot, bring to a simmer, cover, and reduce heat. Cook for about 20 minutes or until rice is tender.
  6. Stir in frozen peas and heat through.
  7. Remove from heat, garnish with fresh parsley, and serve.

Notes

For an extra flavor boost, marinate chicken in lemon juice and herbs the night before. Leftovers can be stored for up to 3 days.
