- 3 cups old-fashioned oats
- 1 cup marshmallow fluff
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 3-5 minutes.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Whisk together the flour, baking soda, cinnamon, and salt in another bowl. Gradually add this dry mixture to the wet mixture, mixing well.
- Fold in the oats until fully combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper, allowing space for spreading.
- Bake for 10-12 minutes or until the edges are golden and the centers are set. Let them cool on a wire rack before filling.
- Mix the marshmallow fluff with powdered sugar until smooth and creamy.
- Spread a generous amount of the marshmallow mixture on the flat side of one cookie and sandwich with another cookie.
- Repeat until all cookies are filled. Enjoy!
