Description

Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 1 cup marshmallow fluff
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. Whisk together the flour, baking soda, cinnamon, and salt in another bowl. Gradually add this dry mixture to the wet mixture, mixing well.
  5. Fold in the oats until fully combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, allowing space for spreading.
  7. Bake for 10-12 minutes or until the edges are golden and the centers are set. Let them cool on a wire rack before filling.
  8. Mix the marshmallow fluff with powdered sugar until smooth and creamy.
  9. Spread a generous amount of the marshmallow mixture on the flat side of one cookie and sandwich with another cookie.
  10. Repeat until all cookies are filled. Enjoy!
