Ingredients

- 1 cup lentils
- 2 carrots, diced
- 1/4 cup mixed herbs (parsley, cilantro, mint)
- 1/2 cup nuts (almonds, walnuts, or your choice)
- 1/2 cup olives, pitted and sliced
- 1/4 cup raisins
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Start by rinsing the lentils under cold water to remove any impurities.
- In a pot, cook the lentils in boiling water until they become tender, about 20-25 minutes.
- Once the lentils are ready, drain them and let them cool in a colander.
- In a large bowl, combine the cooled lentils, diced carrots, mixed herbs, nuts, olives, and raisins.
- In a separate bowl, whisk together the olive oil, lemon juice, cumin, paprika, salt, and pepper.
- Pour the dressing over the salad and toss gently to coat everything evenly.
- Serve immediately or chill in the refrigerator for about 30 minutes to meld the flavors.
