Description

This Moroccan Lentil Salad is a delightful blend of tender lentils, roasted carrots, and fresh herbs, perfect for any occasion.


Ingredients

  • 1 cup lentils
  • 2 carrots, diced
  • 1/4 cup mixed herbs (parsley, cilantro, mint)
  • 1/2 cup nuts (almonds, walnuts, or your choice)
  • 1/2 cup olives, pitted and sliced
  • 1/4 cup raisins
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Start by rinsing the lentils under cold water to remove any impurities.
  2. In a pot, cook the lentils in boiling water until they become tender, about 20-25 minutes.
  3. Once the lentils are ready, drain them and let them cool in a colander.
  4. In a large bowl, combine the cooled lentils, diced carrots, mixed herbs, nuts, olives, and raisins.
  5. In a separate bowl, whisk together the olive oil, lemon juice, cumin, paprika, salt, and pepper.
  6. Pour the dressing over the salad and toss gently to coat everything evenly.
  7. Serve immediately or chill in the refrigerator for about 30 minutes to meld the flavors.
