Instructions
- Prepare the crust: In a mixing bowl, combine the finely crushed graham cracker crumbs and melted butter. Stir until the mixture resembles wet sand and press it into a 9-inch springform pan.
- Cream the cheese: Beat the softened cream cheese using an electric mixer until smooth and creamy.
- Incorporate the sugar: Gradually add the granulated sugar to the cream cheese, beating well until fully incorporated.
- Add the eggs: One by one, add the large eggs to the mixture, beating on low speed just until incorporated.
- Finish with vanilla: Stir in the pure vanilla extract until combined.
- Pour and set: Pour the cheesecake batter over the crust and refrigerate for at least 4 hours or until set.
- Add the caramel: Once set, remove the sides of the springform pan and drizzle with caramel sauce.
