Description

A quick and easy Mediterranean shrimp skillet packed with flavor from lemon and garlic, perfect for busy weeknights.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • Red pepper flakes (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Season the shrimp with salt, pepper, and red pepper flakes if using.
  4. Cook the shrimp for about 2-3 minutes on each side until they turn pink and opaque.
  5. Stir in the lemon juice and zest, mixing well to combine.
  6. Remove from heat and garnish with fresh parsley.
  7. Serve immediately with your choice of side.

Notes

You can prepare the shrimp up to 24 hours in advance and store it in the refrigerator. Store any leftovers in an airtight container in the fridge for up to 2 days.
