Description

A refreshing and flavorful Mediterranean Pasta Salad, perfect for any gathering. Quick and easy, this dish is packed with fresh ingredients and vibrant flavors.


Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Once cooked, drain and let it cool in a large bowl.
  2. Combine the cooled pasta with cherry tomatoes, cucumber, red onion, olives, and feta cheese. Mix gently to keep the ingredients intact.
  3. Whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper in a small bowl until well blended.
  4. Pour the dressing over the pasta salad and toss gently to combine all the fresh Mediterranean flavors.
  5. Garnish with chopped parsley for a pop of color and serve immediately, or refrigerate for later.
