- 8 oz pasta (penne or rotini)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, diced
- 1 cup Kalamata olives, pitted and sliced
- 1 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package instructions until al dente. Once cooked, drain and let it cool in a large bowl.
- Combine the cooled pasta with cherry tomatoes, cucumber, red onion, olives, and feta cheese. Mix gently to keep the ingredients intact.
- Whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper in a small bowl until well blended.
- Pour the dressing over the pasta salad and toss gently to combine all the fresh Mediterranean flavors.
- Garnish with chopped parsley for a pop of color and serve immediately, or refrigerate for later.
Notes
