- 4 eggs (separated, room temperature)
- ¾ cup caster sugar
- 125 g melted butter
- 1 tsp vanilla extract
- ¾ cup plain flour (sifted)
- 2 cups lukewarm milk
- ¼ cup icing sugar (for dusting)
Instructions
- Preheat your oven to 340°F (170°C) and line an 8-inch square pan with parchment paper for easy removal.
- Whip the egg whites in a clean bowl until they hold stiff peaks, then set aside.
- Beat the egg yolks and caster sugar together until pale and fluffy.
- Mix in the melted butter and vanilla extract until well combined.
- Sift in the plain flour, mixing gently until no lumps remain.
- Slowly add in the lukewarm milk, stirring until the batter is smooth.
- Fold the whipped egg whites gently into the batter.
- Pour the batter into the prepared pan and bake for 35–60 minutes, or until golden brown.
- Allow the cake to cool completely in the pan, then dust with icing sugar, slice, and enjoy!
Notes
This cake can be made a day in advance and stored in the fridge. For neat slices, use a knife dipped in hot water.
