Description

A cozy fall dessert with a magical three-layer structure, perfect for gatherings and sweet moments.


Ingredients

  • 4 eggs (separated, room temperature)
  • ¾ cup caster sugar
  • 125 g melted butter
  • 1 tsp vanilla extract
  • ¾ cup plain flour (sifted)
  • 2 cups lukewarm milk
  • ¼ cup icing sugar (for dusting)

Instructions

  1. Preheat your oven to 340°F (170°C) and line an 8-inch square pan with parchment paper for easy removal.
  2. Whip the egg whites in a clean bowl until they hold stiff peaks, then set aside.
  3. Beat the egg yolks and caster sugar together until pale and fluffy.
  4. Mix in the melted butter and vanilla extract until well combined.
  5. Sift in the plain flour, mixing gently until no lumps remain.
  6. Slowly add in the lukewarm milk, stirring until the batter is smooth.
  7. Fold the whipped egg whites gently into the batter.
  8. Pour the batter into the prepared pan and bake for 35–60 minutes, or until golden brown.
  9. Allow the cake to cool completely in the pan, then dust with icing sugar, slice, and enjoy!

Notes

This cake can be made a day in advance and stored in the fridge. For neat slices, use a knife dipped in hot water.
