Description

A creamy, cheesy casserole loaded with tender red potatoes and topped with melted cheddar for a comforting dish perfect for any gathering.


Ingredients

  • 2 lbs red potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled turkey bacon
  • 1/4 cup green onions, chopped
  • 1/4 cup butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Wash and cube the red potatoes; toss them into a pot of salted water and boil until fork-tender.
  3. Drain the potatoes and let cool slightly.
  4. Combine sour cream, half of cheddar cheese, turkey bacon, green onions, melted butter, salt, and pepper in a large bowl.
  5. Stir in the boiled potatoes until coated in the mixture.
  6. Transfer the mixture into a greased baking dish.
  7. Top with remaining cheddar cheese.
  8. Bake for 25-30 minutes until cheese is bubbly and golden.
  9. Serve warm and enjoy!

Notes

Try adding ranch seasoning, steamed veggies, or jalapeños for fun variations! For a lighter version, swap sour cream with Greek yogurt.
