Ingredients

Scale
  • 8 large eggs
  • 1 cup milk
  • 2 cups shredded cheese (cheddar or your choice)

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the eggs and milk until well combined and fluffy.
  3. Stir in the shredded cheese, cooked turkey bacon, diced bell peppers, chopped spinach, baking powder, salt, and pepper. Mix until evenly incorporated.
  4. Pour the egg mixture into a greased 9×13 inch baking dish, ensuring it is spread out evenly.
  5. Bake for 25-30 minutes or until the eggs are set and lightly golden on top.
  6. Let cool for a few minutes before slicing and serving.

Notes

Make-ahead advice: Prepare the mixture the night before and refrigerate. Just give it a good stir before baking in the morning. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
