Description

Delightful Lemon Rolls infused with bright lemon flavor, perfect for breakfast or brunch.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/2 teaspoon salt
  • 1 large egg
  • Zest of 1 lemon
  • 1/4 cup lemon juice
  • 1 cup powdered sugar (for icing)
  • 2 tablespoons lemon juice (for icing)

Instructions

  1. Heat the milk and butter together until warm (about 110°F). Remove from heat and stir in yeast and sugar. Allow this to sit for about 5 minutes until frothy.
  2. Combine flour, salt, and lemon zest in a mixing bowl. Pour in the milk mixture along with the egg. Mix until a soft dough forms.
  3. Knead the dough on a floured surface for about 5 minutes, until it becomes smooth and elastic. Place in an oiled bowl, cover, and let rise for about 1 hour or until doubled in size.
  4. Roll out the dough into a rectangle. Drizzle lemon juice over the top, roll tightly from the long side, and slice into 12 equal rolls.
  5. Arrange the rolls in a greased baking pan, cover with a cloth, and let rise for another 30 minutes.
  6. Preheat the oven to 350°F (175°C). Bake for 20-25 minutes or until golden brown.
  7. Whisk together powdered sugar and lemon juice for icing and drizzle over warm rolls. Enjoy!

Notes

For best results, refrigerate the dough after rising and bake the next morning. Adjust flour as necessary for the right dough consistency.
