Description

A comforting and zesty lemon garlic chicken recipe perfect for meal prep and weeknight dinners.


Ingredients

  • ¼ cup fresh lemon juice
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 teaspoons dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 (6-ounce) boneless, skinless chicken breasts
  • 1 ½ pounds yellow potatoes, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt (plus more to taste)
  • 1 teaspoon black pepper (plus more to taste)
  • 4 small zucchinis, sliced into 1-inch pieces

Instructions

  1. Prepare the marinade by whisking together lemon juice, olive oil, minced garlic, oregano, paprika, salt, and black pepper in a large bowl.
  2. Add the chicken breasts and toss to coat. Allow to marinate for at least 20 minutes or up to 24 hours.
  3. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Spread potato pieces on the baking sheet, drizzle with olive oil, sprinkle with garlic powder, salt, and pepper. Toss to combine.
  5. Bake for 30 minutes or until golden brown, stirring halfway through.
  6. Heat a large skillet over medium-high heat. Remove chicken from marinade, shaking off excess liquid.
  7. Place chicken in the skillet and cook for 7-8 minutes on each side until golden brown and fully cooked.
  8. Remove chicken from the skillet and let it rest for 5 minutes before slicing.
  9. Add zucchini to the remaining marinade and toss to coat.
  10. In the same skillet, cook zucchini on high heat for 5-7 minutes until softened and lightly browned. Season with salt and pepper to taste.
  11. Assemble the meal prep containers by dividing sliced chicken, roasted potatoes, and sautéed zucchini into four containers. Let cool before sealing.

Meal prep containers can last in the fridge for up to 4 days.
