Description

Delightful Key Lime Cookies with a refreshing burst of citrus, perfect for any occasion.


Ingredients

  • ½ cup unsalted butter, softened to room temperature
  • 1 large egg
  • ¾ cup sugar
  • ¼ cup light brown sugar
  • 1 teaspoon vanilla extract
  • 23 teaspoons key lime zest
  • 1 ¾ cups flour (219g)
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup powdered sugar (for the glaze)
  • 1 tablespoon key lime juice
  • 1 tablespoon milk
  • ¼ teaspoon vanilla extract (for the glaze)
  • Pinch of salt (optional)
  • ½ teaspoon key lime zest (for the glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter with the granulated sugar and light brown sugar until light and fluffy.
  3. Add the large egg and vanilla extract, mixing until combined.
  4. Incorporate the zesty key lime zest into the mixture.
  5. Mix the flour, baking soda, and salt in a separate bowl, then gradually add to the wet ingredients.
  6. Scoop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until slightly golden at the edges.
  8. Cool on the baking sheet for a couple of minutes before transferring to a wire rack.
  9. Prepare the glaze by mixing powdered sugar, key lime juice, milk, vanilla extract, and a pinch of salt until smooth.
  10. Drizzle the glaze over the cooled cookies and let it set before serving.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Store leftovers in an airtight container at room temperature for up to a week.
