Ingredients

- 1 lb ground chicken
- 3 large zucchinis (or 4 small)
- 2 cups marinara or pasta sauce
- 3 cups freshly shredded mozzarella
- 1 cup shredded parmesan
- Salt, pepper, and garlic powder to taste
Instructions
- Cook the ground chicken in a large skillet over medium heat, breaking it apart until no longer pink and seasoning to taste.
- Mix in 2 cups of marinara sauce and let it simmer on low heat.
- Preheat the oven to 400°F and grease a 9×13 baking dish.
- Slice the zucchinis in half lengthwise and scoop out the insides.
- Combine 2 cups of mozzarella and 1/2 cup of parmesan into the chicken mixture.
- Spoon the mixture into each zucchini boat and top with the remaining mozzarella and parmesan.
- Bake uncovered for 25 minutes, then broil for a few minutes for a golden finish.
Notes
Prepare the chicken filling ahead of time and store it in the refrigerator for quick assembly later.
