Description

A cozy and healthy keto-friendly dish filled with savory ground chicken, cheese, and zucchini.


Ingredients

Scale
  • 1 lb ground chicken
  • 3 large zucchinis (or 4 small)
  • 2 cups marinara or pasta sauce
  • 3 cups freshly shredded mozzarella
  • 1 cup shredded parmesan
  • Salt, pepper, and garlic powder to taste

Instructions

  1. Cook the ground chicken in a large skillet over medium heat, breaking it apart until no longer pink and seasoning to taste.
  2. Mix in 2 cups of marinara sauce and let it simmer on low heat.
  3. Preheat the oven to 400°F and grease a 9×13 baking dish.
  4. Slice the zucchinis in half lengthwise and scoop out the insides.
  5. Combine 2 cups of mozzarella and 1/2 cup of parmesan into the chicken mixture.
  6. Spoon the mixture into each zucchini boat and top with the remaining mozzarella and parmesan.
  7. Bake uncovered for 25 minutes, then broil for a few minutes for a golden finish.

Notes

Prepare the chicken filling ahead of time and store it in the refrigerator for quick assembly later.
