Ingredients
Scale
- 1 cup granulated sugar
- ½ cup unsalted butter (melted)
- 4 large eggs
- ½ cup all-purpose flour
- ¼ cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- 1 ½ cups whole milk
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions

- Combine the granulated sugar, melted butter, eggs, flour, lemon juice, lemon zest, whole milk, vanilla extract, and a pinch of salt in a blender. Blend until smooth and creamy.
- Pour the mixture into the prepared pie dish, and watch the magic happen as it layers itself during baking!
- Bake for 35–40 minutes until the top is beautifully golden and the center has a slight jiggle — that’s the perfect sign!
- Allow the pie to cool at room temperature. It can be served chilled or at room temperature, depending on your preference.
Notes
This pie is best when made a day ahead, as it allows the flavors to meld beautifully. Use a sharp knife dipped in hot water for clean slices.
