Description

A cozy, citrusy pie with a creamy filling that magically creates layers as it bakes, perfect for any occasion.

Ingredients

Scale
  • 1 cup granulated sugar
  • ½ cup unsalted butter (melted)
  • 4 large eggs
  • ½ cup all-purpose flour
  • ¼ cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • 1 ½ cups whole milk
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch pie dish.
  2. Combine the granulated sugar, melted butter, eggs, flour, lemon juice, lemon zest, whole milk, vanilla extract, and a pinch of salt in a blender. Blend until smooth and creamy.
  3. Pour the mixture into the prepared pie dish, and watch the magic happen as it layers itself during baking!
  4. Bake for 35–40 minutes until the top is beautifully golden and the center has a slight jiggle — that’s the perfect sign!
  5. Allow the pie to cool at room temperature. It can be served chilled or at room temperature, depending on your preference.

Notes

This pie is best when made a day ahead, as it allows the flavors to meld beautifully. Use a sharp knife dipped in hot water for clean slices.
