Description

A comforting and nutritious pasta salad packed with fresh veggies and creamy Greek yogurt for a delightful meal.


Ingredients

  • 8 ounces whole grain pasta
  • 1 can (5 ounces) tuna, drained
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Cook the whole grain pasta according to package instructions. Drain and let cool.
  2. Combine the cooked pasta, tuna, cherry tomatoes, cucumber, bell pepper, and red onion in a large mixing bowl.
  3. Whisk together Greek yogurt, olive oil, lemon juice, salt, and pepper until creamy and smooth.
  4. Pour the dressing over the pasta and toss until well coated.
  5. Garnish with fresh herbs if desired and serve chilled.

Notes

This salad can be made a day in advance for best flavor. Store leftovers in an airtight container for up to 3 days.
