Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 avocado, diced
  • 1 cup corn (fresh or canned)
  • 1/2 red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions

  1. Marinate the shrimp in olive oil, salt, and pepper for about 15 minutes, coating them well.
  2. Preheat the grill to medium-high heat for the perfect char on the shrimp.
  3. Grill the shrimp for 2-3 minutes on each side until they are pink and cooked through.
  4. Mix together the corn, diced avocado, red onion, cilantro, lime juice, and season with salt and pepper for the fresh salsa.
  5. Combine the sour cream, mayonnaise, garlic powder, and lime juice in another bowl to make the creamy sauce.
