Description

A delightful and creamy sandwich packed with fresh ingredients, perfect for picnics or quick dinners.


Ingredients

  • 4 slices whole-wheat bread
  • 1 ripe avocado, sliced
  • 8 oz mozzarella cheese, sliced
  • 1 cucumber, sliced
  • 2 cups spinach
  • 2 green onions, chopped
  • 1/4 cup fresh herbs (basil, parsley, dill)
  • 1/2 cup Greek yogurt or mayonnaise
  • 2 tbsp lemon juice
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Mix together Greek yogurt or mayonnaise with chopped fresh herbs and lemon juice.
  2. Season with salt and pepper to taste.
  3. Spread a generous amount of the green goddess sauce on one slice of whole-wheat bread.
  4. Layer on slices of cucumber, avocado, mozzarella cheese, and spinach.
  5. Top with another slice of bread spread with the green goddess sauce.
  6. Cut in half and serve immediately, or wrap for a picnic.
