- 1 cucumber, sliced
- 2 cups spinach
- 2 green onions, chopped

- 1/2 cup Greek yogurt or mayonnaise
- 2 tbsp lemon juice
- Salt, to taste
- Pepper, to taste
Instructions
- Mix together Greek yogurt or mayonnaise with chopped fresh herbs and lemon juice.
- Season with salt and pepper to taste.
- Spread a generous amount of the green goddess sauce on one slice of whole-wheat bread.
- Layer on slices of cucumber, avocado, mozzarella cheese, and spinach.
- Top with another slice of bread spread with the green goddess sauce.
- Cut in half and serve immediately, or wrap for a picnic.
