- 1 whole chicken
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 2 lemons, zested and juiced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the softened butter, minced garlic, lemon zest, lemon juice, rosemary, thyme, salt, and pepper until well combined.
- Pat the chicken dry with paper towels and rub the butter mixture all over the chicken, including under the skin.
- Place the chicken in a roasting pan and roast in the preheated oven for about 75 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving and serving.
Notes
For best results, you can prepare the herb butter mixture up to 24 hours in advance. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
