- 4 chicken thighs or breasts
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 pound baby potatoes, halved
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Melt the butter in a large skillet over medium heat.
- Add the minced garlic and cook until fragrant, about 1 minute.
- Season the chicken with salt and pepper, then add it to the skillet.
- Cook the chicken for 6-7 minutes on each side until browned and cooked through.
- Add the halved potatoes to the skillet, and cover.
- Cook for 15-20 minutes, stirring occasionally, until the potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
Make-Ahead Option: Marinade the chicken a few hours ahead for more flavor. If baby potatoes aren’t available, regular diced potatoes or sweet potatoes can be used.
