Description

Ingredients

  • 4 chicken thighs or breasts
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 pound baby potatoes, halved
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the minced garlic and cook until fragrant, about 1 minute.
  3. Season the chicken with salt and pepper, then add it to the skillet.
  4. Cook the chicken for 6-7 minutes on each side until browned and cooked through.
  5. Add the halved potatoes to the skillet, and cover.
  6. Cook for 15-20 minutes, stirring occasionally, until the potatoes are tender.
  7. Garnish with fresh parsley before serving.

Notes

Make-Ahead Option: Marinade the chicken a few hours ahead for more flavor. If baby potatoes aren’t available, regular diced potatoes or sweet potatoes can be used.
