Description

Deliciously crispy fried chicken tender bites served with a zesty buffalo ranch dipping sauce, perfect for gatherings or weeknight dinners.


Ingredients

  • 1 1/2 – 2 pounds Smart Chicken Organic Chicken Tenderloins, cut into thirds
  • Vegetable Oil, for deep frying
  • Kosher Salt
  • Cayenne Pepper
  • 2 cups All-Purpose Flour
  • 1/2 tsp Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Cayenne Pepper
  • 1/2 tsp Black Pepper
  • 1 tsp Kosher Salt
  • 1 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • 1 1/4 cup non-alcoholic beer
  • 1 Egg
  • 1/2 tsp Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Cayenne Pepper
  • 1/2 tsp Black Pepper
  • 1 tsp Kosher Salt
  • 1/4 cup Mayonnaise
  • 1/4 cup Buttermilk
  • 1/4 cup Sour Cream
  • 1 Tbsp Chopped Fresh Parsley
  • 1 Tbsp Chopped Fresh Chives
  • 23 Tbsp Hot Pepper Sauce
  • 1 Garlic Clove, grated
  • Squeeze of Lemon Juice
  • Kosher Salt to taste

Instructions

  1. Whisk together the buffalo ranch sauce ingredients and set aside.
  2. Heat a large pot with vegetable oil to 375°F and set out a large sheet tray lined with a wire rack.
  3. Whisk together the flour dredge ingredients in one bowl.
  4. Whisk together the beer batter dredge ingredients until smooth in another bowl.
  5. Season the chicken pieces generously with kosher salt.
  6. Dredge each chicken piece in the flour mixture, shaking off excess before dipping into the beer batter, then returning to the flour for another coating.
  7. Fry the chicken in batches for about 5 minutes, until golden brown.
  8. Transfer the fried chicken to the wire rack and season lightly with kosher salt and cayenne pepper.
  9. Serve warm with the buffalo ranch dipping sauce and enjoy!

Notes

For best results, keep the oil temperature between 350°F and 375°F. You can prepare the chicken and beer batter ahead of time.
