- 8 all-beef hot dogs
- 8 soft hot dog buns, lightly toasted
- Firecracker Sauce:
- ¼ cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 tablespoon fresh lime juice
- Toppings:
- 1 cup shredded sharp cheddar cheese (or pepper jack)
- ½ cup diced red onions
- ½ cup sliced jalapeños (optional)
- Fresh cilantro leaves
Instructions
- Make the Firecracker Sauce: In a small bowl, whisk together ¼ cup mayonnaise, 2 tablespoons sriracha, 1 tablespoon honey, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, and 1 tablespoon fresh lime juice until smooth.
- Prep the Toppings: Dice the red onions, slice the jalapeños (removing seeds if you want less heat), shred the cheese, and roughly chop the cilantro. Set these aside while we get cooking.
- Heat the Grill: Preheat your grill to medium-high heat (about 400°F).
- Grill the Hot Dogs: Place the hot dogs on the grill and cook for about 5-7 minutes, turning occasionally.
- Toast the Buns: During the last 2 minutes of grilling, place the buns cut-side down on the grill.
- Assemble the Hot Dogs: Spread a hearty dollop of the Firecracker Sauce inside each bun, add your grilled hot dog, and pile on the toppings.
- Serve Immediately: Enjoy hot off the grill while the cheese is melty and the sauce is vibrant.
Notes
For a spicier version, adjust the heat level of the sriracha. Leftover hot dogs can be stored in an airtight container for up to 3 days.
