Ingredients

  • 8 all-beef hot dogs
  • 8 soft hot dog buns, lightly toasted
  • Firecracker Sauce:
  • ¼ cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh lime juice
  • Toppings:
  • 1 cup shredded sharp cheddar cheese (or pepper jack)
  • ½ cup diced red onions
  • ½ cup sliced jalapeños (optional)
  • Fresh cilantro leaves

Instructions

  1. Make the Firecracker Sauce: In a small bowl, whisk together ¼ cup mayonnaise, 2 tablespoons sriracha, 1 tablespoon honey, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, and 1 tablespoon fresh lime juice until smooth.
  2. Prep the Toppings: Dice the red onions, slice the jalapeños (removing seeds if you want less heat), shred the cheese, and roughly chop the cilantro. Set these aside while we get cooking.
  3. Heat the Grill: Preheat your grill to medium-high heat (about 400°F).
  4. Grill the Hot Dogs: Place the hot dogs on the grill and cook for about 5-7 minutes, turning occasionally.
  5. Toast the Buns: During the last 2 minutes of grilling, place the buns cut-side down on the grill.
  6. Assemble the Hot Dogs: Spread a hearty dollop of the Firecracker Sauce inside each bun, add your grilled hot dog, and pile on the toppings.
  7. Serve Immediately: Enjoy hot off the grill while the cheese is melty and the sauce is vibrant.

Notes

For a spicier version, adjust the heat level of the sriracha. Leftover hot dogs can be stored in an airtight container for up to 3 days.
