Instructions
- Preheat the oven to 350°F (175°C).
- Combine the shredded chicken, uncooked rice, chicken broth, drained black beans, corn, salsa, taco seasoning, salt, and pepper in a large baking dish.
- Mix well until all ingredients are evenly combined.
- Spread the mixture evenly in the dish, ensuring the rice is submerged in the liquid.
- Cover the baking dish with foil and pop it into the preheated oven. Bake for 40 minutes.
- Remove the foil and sprinkle the shredded cheese generously over the top.
- Return the dish to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
