Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup rice, uncooked
  • 2 cups chicken broth
  • 1 can black beans, drained
  • 1 cup corn
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, uncooked rice, chicken broth, drained black beans, corn, salsa, taco seasoning, salt, and pepper in a large baking dish.
  3. Mix well until all ingredients are evenly combined.
  4. Spread the mixture evenly in the dish, ensuring the rice is submerged in the liquid.
  5. Cover the baking dish with foil and pop it into the preheated oven. Bake for 40 minutes.
  6. Remove the foil and sprinkle the shredded cheese generously over the top.
  7. Return the dish to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  8. Let it cool for a few minutes before serving.
