- 2 large zucchinis
- 1 cup all-purpose flour (or gluten-free flour)
- 1/2 cup grated Parmesan cheese
- 2 large eggs (or flax eggs for vegan option)
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh parsley
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for frying or baking
Instructions
- Start by grating the zucchinis and placing them in a colander. Sprinkle them with salt and allow them to sit for about 10-15 minutes to draw out the excess moisture.
- Once the time’s up, give the zucchinis a good squeeze to remove the water and transfer them to a mixing bowl.
- Add the flour, grated Parmesan cheese, eggs, green onions, parsley, garlic powder, salt, and pepper to the bowl. Mix until well combined.
- Heat a non-stick skillet over medium heat and drizzle in olive oil to coat the bottom.
- Using a spoon, drop spoonfuls of the mixture into the skillet, flattening them slightly. Cook for about 3-4 minutes on each side until golden brown.
- Alternatively, if baking, preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Form the fritters and place them on the sheet. Spray or brush with olive oil and bake for 20-25 minutes, flipping halfway through.
- Serve the fritters warm, paired with your favorite dip.
