Description

Delicious and crispy zucchini fritters that are perfect for any occasion, filled with flavor and family-friendly.

Ingredients

Scale
  • 2 large zucchinis
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs (or flax eggs for vegan option)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for frying or baking

Instructions

  1. Start by grating the zucchinis and placing them in a colander. Sprinkle them with salt and allow them to sit for about 10-15 minutes to draw out the excess moisture.
  2. Once the time’s up, give the zucchinis a good squeeze to remove the water and transfer them to a mixing bowl.
  3. Add the flour, grated Parmesan cheese, eggs, green onions, parsley, garlic powder, salt, and pepper to the bowl. Mix until well combined.
  4. Heat a non-stick skillet over medium heat and drizzle in olive oil to coat the bottom.
  5. Using a spoon, drop spoonfuls of the mixture into the skillet, flattening them slightly. Cook for about 3-4 minutes on each side until golden brown.
  6. Alternatively, if baking, preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Form the fritters and place them on the sheet. Spray or brush with olive oil and bake for 20-25 minutes, flipping halfway through.
  7. Serve the fritters warm, paired with your favorite dip.

Notes

Make-ahead advice: Prepare the zucchini mixture the night before and store in the fridge until ready to cook.
