- 2 steaks (ribeye or sirloin)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped
Instructions
- Season the steaks with salt and pepper, ensuring they are well-coated for maximum flavor.
- Heat olive oil in a skillet over medium-high heat until shimmering.
- Sear the steaks for about 4-5 minutes on each side, or until they reach your desired doneness. Once done, remove the steaks from the skillet and let them rest for a few minutes.
- Add the minced garlic to the same skillet and sauté until fragrant, about 30 seconds – be careful not to burn it!
- Pour in the heavy cream and bring it to a gentle simmer, stirring occasionally.
- Stir in the grated Parmesan cheese and continue cooking until the sauce thickens.
- Return the steaks to the skillet, spoon the sauce over them, and heat through for another minute.
- Garnish with freshly chopped parsley before serving.
Notes
For variations, consider adding sautéed mushrooms, crushed red pepper flakes, fresh herbs, or lemon zest.
