- 1 package summer sausage, sliced
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 2 cups fresh spinach
- Salt and pepper to taste
- Optional: red pepper flakes for heat
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the chopped onion and bell pepper, sautéing until they’re soft and slightly caramelized, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the sliced summer sausage to the skillet and cook until browned.
- Gently fold in the fresh spinach and cook until wilted.
- Season with salt, pepper, and red pepper flakes if desired.
- Serve hot and enjoy!
