Description

Tender and hearty oatmeal protein cookies that provide great flavor and a meaningful dose of protein.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup protein powder (your choice of flavor)
  • 1/2 cup nut butter (peanut butter or almond butter)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: chocolate chips or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the oats, protein powder, nut butter, honey, vanilla extract, and salt until well combined.
  3. Fold in chocolate chips or dried fruit if desired.
  4. Scoop out spoonfuls of the mixture onto a baking sheet lined with parchment paper and flatten them slightly.
  5. Bake for 10-12 minutes or until the edges are golden brown.
  6. Allow to cool for a few minutes before transferring them to an airtight container.

Store in an airtight container at room temperature for up to a week; freeze for longer storage.
