Description

A nourishing and colorful salad packed with nutrients from kale, white beans, and crunchy seeds, perfect for any occasion.


Ingredients

Scale
  • 1 bunch kale, thick stems removed and leaves roughly chopped
  • 1 teaspoon sea salt (plus more to taste)
  • 1 can white beans, drained (about 1½ cups)
  • 1 firm-ripe avocado, sliced or chopped
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup hemp seeds
  • Juice of 1 lemon
  • 2 teaspoons Dijon mustard
  • 1 tablespoon maple syrup
  • ¼ cup olive oil
  • ½ teaspoon sea salt
  • 1 clove garlic, grated (optional)

Instructions

  1. Whisk together the juice of one lemon, Dijon mustard, maple syrup, olive oil, sea salt, and grated garlic (if using) to create your dressing.
  2. Sprinkle the chopped kale with 1 teaspoon of sea salt and massage it with your hands for about 2-3 minutes until the leaves soften.
  3. Fold in the drained white beans, mixing everything together gently.
  4. Add the diced avocado, pumpkin seeds, sunflower seeds, and hemp seeds, folding them into the kale mixture.
  5. Pour your homemade dressing over the salad and toss gently to ensure every bite is coated.
  6. Serve immediately or let it chill in the fridge for a short while to enhance the flavors.

Notes

This salad tastes even better if left to chill for an hour or two. It’s also great for meal prepping!
