Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
- Cream together the softened butter and granulated sugar in a large bowl until light and fluffy, about 2-3 minutes.
- Beat in the egg, followed by the lemon zest and lemon juice.
- Whisk together the flour, baking powder, and salt in another bowl. Gradually add this dry mixture to the wet ingredients until a soft dough forms.
- Roll small pieces of dough into ropes and shape them into knots or circles, about 1-2 inches wide.
- Place the cookies on the prepared baking sheet and bake for 10-12 minutes or until lightly golden around the edges.
- Let the cookies cool on a wire rack. Dust with powdered sugar if desired before serving.
