Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup vegetable oil
  • 2 large eggs

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mix together the grated zucchini, sugar, and vegetable oil until well combined.
  3. Beat in the eggs and vanilla extract until thoroughly mixed.
  4. Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined. If using, fold in the chocolate chips.
  6. Pour the batter into the prepared loaf pan, smoothing it out with a spatula.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
