Description

Delightful and creamy bars filled with fresh blueberries and a buttery oat crumble, perfect for cozy evenings.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups fresh blueberries
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish with a bit of butter or cooking spray.
  2. Combine the flour, oats, brown sugar, and melted butter in a bowl. Stir until crumbly, then press half into the bottom of the baking dish to form your crust.
  3. Beat the softened cream cheese, granulated sugar, egg, and vanilla extract in a separate bowl until smooth and creamy. Spread the mixture over the crust.
  4. Scatter the fresh blueberries on top of the cream cheese layer. Crumble the remaining oat mixture over the blueberries.
  5. Bake in the preheated oven for 30-35 minutes, or until set and golden brown. Allow to cool before cutting into squares.

Notes

For a zesty twist, add lemon zest to the cream cheese mixture. Store leftovers in an airtight container for up to five days.
