Ingredients

  • 1 cup barley
  • 4 cups beef broth
  • 2 cups water
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Toss in the beef stew meat, browning on all sides.
  5. Pour in the beef broth and water, stirring gently.
  6. Add the barley and dried thyme, bringing to a boil.
  7. Reduce heat and let simmer for about one hour.
  8. Season with salt and pepper to taste before serving hot.

Notes
